2021 Merlot

This is what merlot should be.  It is fruit forward with just enough tannins and body to support the great blackberry and strawberry flavors.  This wine is great and ready to drink right now.

Wine Club Bacon Jam

Ingredients

1 lb bacon sliced
3 small yellow onions, sliced
1/4 c dark brown sugar
4 garlic cloves, minced
2 green apples, diced
3/4 c apple cider vinegar
1/4 c honey
1 tbsp dijon mustard
water as needed

Instructions

1. in a large pot, over medium heat, cook bacon until crispy. Remove bacon and leave bacon fat in the pot.

2. add onions and sugar, stirring occasionally, until caramelized.

3. add garlic and apples, cooking until soft.

4. add vinegar, honey, mustard, bacon and bring to boil adding water as needed. Cover and reduce heat, simmer for at least 20 min stirring occasionally. Remove lid and cook until thick and jam like adding water as needed to keep moist.

5. Enjoy over meatballs with 2021 Merlot!
