2019 Merlot Reserve

This was our 15th merlot harvest.   It came in from the vineyard cool and we let it cold soak for 4 days for color extraction.  We then did a whole berry fermentation with manual punch downs 3 times per day.  This finished out naturally in about 1 week and gave us a nice dry wine full of color and flavor.  From here we put it into a stainless steel tank for a day or two to let it settle which helps keep the wine clean and fruity before it goes into barrels. We chose a blend of 50% new french and 50% neutral oak to bring added nuance to the wine while still letting the fruitiness shine through.

In January of 2020 we started the month long process of malolactic fermentation which along with the barreling does a lot for softening the wine and creating many of the subtle notes to enhance the flavor.  It spent 18 months in the barrels and then was gently filtered through our crossflow filter just before getting bottled where it spent almost 2 full years before being release to the wine club. 

This is a nice clean merlot with plenty of bright fruit flavors and a nice amount of acidity to pair with all of your favorite food dishes.
